Why does density matter?

To get weight (g) from a volume (ml) measure, you need the ingredient's density (g/ml). Water is the 1.0 g/ml reference (1 ml = 1 g), but flour is 0.6, sugar 0.85, oil 0.92, salt 1.2 and honey 1.42 g/ml. This difference is critical in professional baking (1 glass of water = 200 g, but 1 glass of flour ~120 g).
