Finely chop the onion and garlic. Dice the carrot, parsley root, and potato. Slice the sucuk.
Heat the vegetable oil in a pot. Turn the onion for 4 minutes, then add the garlic and sucuk and cook for 2 more minutes.
Lower the heat. Add the sweet red paprika and stir for 20 seconds; immediately add the tomato paste and carrot so it does not burn.
Add the potato, bay leaf, beans, and 1.5 liters hot water. When it boils, cook over low heat for 25 minutes.
For the csipetke, knead the egg, flour, and a pinch of salt. Tear tiny fingernail-sized pieces from the stiff dough into the soup and cook for 5 minutes.
Mix the flour with the sour cream in a small bowl until smooth. Temper with a ladle of hot soup, add to the pot, and boil for 2 minutes.
Check the salt and serve with parsley.
