Soak the black eyed peas in hot water for 20 minutes and rub off the skins.
Puree the black eyed peas, red peppers, onion, garlic, neutral oil, vegetable stock, salt, and black pepper.
Add the hot pepper to the puree if desired.
Divide the puree among oiled small molds.
Arrange the molds in the steamer.
Steam the moin moin over medium heat for 45 minutes.
Rest for 10 minutes, remove from the molds, and slice.
💡 Tip: The puree should flow slowly from a spoon; if it is too thin, it will be harder to set in the steamer.
