Mix the chicken thigh meat with lime juice and half of the salt, then let stand for 12 minutes.
Grind the shallots, garlic, ginger, turmeric, cashews, and hot peppers into a coarse paste.
Heat the coconut oil and fry the spice paste for 5 minutes until fragrant.
Add the lemongrass, bay leaf, lime leaves, and chopped tomatoes, and cook for 4 minutes.
Add the chicken to the pot, coat it with the paste, and turn it for 3 minutes.
Add half a cup of hot water and the remaining salt, cover, and cook for 22 minutes.
Stir in the basil at the last minute, remove the lemongrass, and serve the dish hot.
