Pat the chicken thighs dry with paper towels and rub both sides with salt and pepper; for the sauce, whisk the soy sauce, apple juice, water, and honey in a small bowl.
Heat the oil in a wide pan, lay the chicken skin-side down, and crisp the skin over medium-high heat for 6 minutes.
Flip the chicken and cook the other side 4 more minutes; add crushed garlic and grated ginger to the pan and stir for 30 seconds.
Pour the sauce into the pan; turning the chicken over medium heat for 6 minutes, reduce it to a dark glossy syrup.
Move the chicken to a board and rest 3 minutes; reduce the remaining sauce in the pan 1 more minute until thick.
Slice the chicken into 1.5 cm pieces and plate; drizzle the pan teriyaki over it and scatter sesame and thin rings of spring onion.
