Cut the chicken breast into 3 cm cubes; mix it in a large bowl with yogurt, olive oil, crushed garlic, red pepper flakes, thyme, salt, black pepper, and lemon juice.
Cover with plastic wrap and marinate in the refrigerator for at least 2 hours, preferably overnight.
Thread the marinated chicken tightly onto metal skewers, leaving very little space between pieces.
Cook on a preheated grill or in a 220°C oven for 15 to 20 minutes, turning until each side starts to char.
Slide the chicken off the skewers onto a serving plate; sprinkle with sumac and serve hot with pilaf and ezme.
💡 Tip: Marinate for at least 2 hours; overnight gives a much deeper flavor. If marinating overnight, halve the lemon juice so the acidity does not over-tenderize the chicken.
