Brown the chicken pieces in the pot for 10 minutes, then remove them.
Turn the pastirma, pearl onions and flour in the pot for 5 minutes.
Add the wine and chicken stock, then return the chicken to the pot.
Cook over low heat for 60 minutes, until the chicken is tender.
Saute the mushrooms in butter and add them to the pot in the final 10 minutes.
💡 Tip: Adding the mushrooms in the final section prevents them from becoming rubbery in the sauce.
