Wash the basmati rice until the water runs clear, then soak for 20 minutes.
Mix the chicken thigh fillets with yogurt, crushed garlic, ginger, garam masala, turmeric, and half of the salt.
Marinate the chicken in the refrigerator for at least 40 minutes.
Thinly slice the onions and fry them in vegetable oil for 14 minutes, until dark golden.
Cook the marinated chicken with butter in a pot for 10 minutes, until the sauce thickens.
Cook the rice with cardamom, cinnamon, remaining salt, and chicken stock for 8 minutes, leaving it half-firm.
Layer rice, chicken, and half of the onions in a baking dish, then drizzle with saffron milk.
Cover the dish and bake at 175°C for 22 minutes, until the layers unite with steam.
Sprinkle with almonds and serve without crushing the rice layers.
💡 Tip: Wash the basmati and soak it for 20 minutes; baldo rice in Turkey will not give the same aroma and makes the layers heavier.
