Slice the onions into thin half moons, crush the garlic, and finely chop the hot green pepper.
Mix the chicken thighs with lemon juice, mustard, garlic, hot pepper, half of the salt, and black pepper.
Add the onions to the marinade and rest the chicken in the refrigerator for 1 hour.
Remove the chicken from the marinade and brown both sides in olive oil for 10 minutes.
Cook the marinated onions in the same pot for 18 minutes, until softened and sweet.
Return the chicken to the pot and add the chicken stock, bay leaves, and remaining salt.
Cook chicken yassa over low heat for 32 minutes, until the sauce thickens.
Remove the bay leaves and serve the chicken over rice pilaf with the onion sauce.
💡 Tip: If your mustard is very sharp, you can add a little honey to the marinade; local mustards can dominate Senegalese onion sauce.
🍽️ Serving suggestion: Serve chicken yassa over plain rice, with charred pepper and lemon sparkling water instead of ayran if desired.
