Put the granulated sugar and water in a pot and boil for 12 minutes.
Add the lemon juice, boil the syrup for 3 more minutes, and leave it to cool until warm.
Loosen the shredded kadayif by lifting it apart, then toss it with half of the melted butter.
Spread small handfuls of kadayif on the counter, sprinkle with walnut kernels, and roll into long rolls.
Arrange the rolls in a tray and drizzle the remaining butter over them.
Bake the burma kadayif in a 180°C oven for 34 minutes, until browned.
Pour the warm syrup over the hot kadayif.
Rest the dessert for 60 minutes, until it absorbs the syrup.
💡 Tip: Do not squeeze the kadayif too tightly while rolling; too much pressure keeps the butter from reaching the layers and leaves the center dry.
🍽️ Serving suggestion: Serve burma kadayif close to room temperature, with optional plain ice cream or unsweetened Turkish coffee.
