Blend scallions, Scotch bonnet, garlic, ginger, allspice, thyme, lime juice, brown sugar, grape vinegar and salt.
Make several cuts in the skin of the chicken pieces.
Coat the chicken with the marinade and refrigerate for 24 hours.
Heat the oven to 220°C or prepare the grill for medium-high heat.
Place the chicken on an oiled tray and cook covered for 35 minutes.
Uncover and cook for 15 to 20 minutes more, until the skin darkens.
