Cut the chicken thighs and liver into bite-size pieces and pat them dry with paper towels.
Toss the meats with the spices, salt, and half of the olive oil, then rest for 10 minutes.
Slice the onions thinly into half-moons.
Heat a wide pan very well and turn the chicken thighs over high heat for 8 minutes.
Add the liver and onion, then cook for 7 more minutes.
Finish with sumac and parsley, then serve hot inside lavash.
💡 Tip: If the pan gets crowded, the meat releases liquid; cook in two batches over high heat if needed.
