Cut the chicken thigh meat into bite-size pieces and slice the red bell pepper into thin strips.
Put the thick part of the coconut milk in a pot and fry the red curry paste for 3 minutes.
Add the chicken and turn it in the curry oil for 5 minutes.
Add the remaining coconut milk, bamboo shoots, red bell pepper, fish sauce, and brown sugar.
Simmer the curry over low heat for 16 minutes until the chicken is tender.
Stir in the lime juice and Thai basil, heat for 1 more minute, and serve.
💡 Tip: Fry the curry paste in the thick part of the coconut milk; when the oil separates, the spices no longer taste raw.
