Rinse the green lentils and boil them with 3 cups of water for 18 minutes, until slightly tender.
Saute the onion in olive oil for 5 minutes, until translucent.
Add the pepper paste and ground red pepper, then cook for 2 minutes to release their aroma.
Add the boiled lentils with their cooking water to the pot, then add the remaining water.
Add the fine bulgur, salt, and black pepper, then cook over low heat for 8 minutes.
Turn off the heat and rest the koluk asi for 5 minutes so the bulgur absorbs the last liquid.
Drizzle olive oil over the top and serve hot or warm.
💡 Tip: Do not add the fine bulgur too early; if it goes in with the lentils, it sticks to the bottom and makes the dish heavy.
