Boil the green lentils for 14 minutes until half tender, then drain.
Slice the onions thinly into half-moons.
Fry two thirds of the onions in half the olive oil for 18 minutes until deep golden.
Turn the rice, cumin, coriander seeds, cinnamon, salt, and black pepper in the remaining olive oil for 3 minutes.
Add the lentils and water, then cook the pilaf over low heat for 16 minutes.
Rest the pilaf for 10 minutes so the grains do not break.
Spread the fried onions over the top, finely chop the remaining raw onion, and sprinkle it on if desired.
💡 Tip: Do not rush the onions; over medium heat they darken into sweet depth rather than bitterness.
