Thinly slice the string cheese, soak it in water for 20 minutes, and drain.
Boil the sugar and water; after 10 minutes, add the lemon juice and rose water, then leave the syrup to cool.
Tear the shredded kadayif into small pieces and toss it until melted butter touches every strand.
Press half the kadayif into a greased tray.
Spread the drained string cheese evenly over the kadayif, cover with the remaining kadayif, and press again.
Bake the dessert in a 190°C oven for 28 to 32 minutes, until the top is browned.
Pour the cold syrup over the hot dessert, rest for 10 minutes, and serve with pistachios.
