Rinse the rice, soak it in warm water for 15 minutes, and drain.
Saute the onion in half of the olive oil for 5 minutes.
Add the pine nuts, rice, currants, allspice, cinnamon, black pepper, and salt.
Add the chicken stock and cook the stuffing rice for 12 minutes, leaving it slightly firm.
Open the chicken thighs, fill them with the rice, and close them with the seams facing down.
Loosen the tomato paste with the remaining olive oil and brush it over the chicken.
Bake Topkapi chicken at 190°C for 33 minutes, until browned.
