Cut the potatoes into 2 cm cubes.
Finely chop the onion, garlic, and ginger.
Soften the onion in vegetable oil for 5 minutes.
Add the cumin seeds, turmeric, ground red pepper, garlic, and ginger, and fry for 1 minute.
Add the potatoes and salt, and cook while stirring for 5 minutes.
Add half a cup of water, cover, and cook for 12 minutes until the potatoes are tender.
Add the spinach and wilt for 3 minutes, then serve with garam masala and lime juice.
