Rub the chicken thighs with salt, black pepper, oregano, and crushed garlic.
Chop the onion and half of the tomatoes and put them in a pot.
Add the chicken, bay leaf, and 1 cup water, and cook for 32 minutes.
Remove and shred the chicken, then reduce the sauce in the pot for 8 minutes.
Return the shredded chicken to the sauce and mix.
Warm the rolls lightly and spread mayonnaise and mustard inside.
Fill the sandwiches with lettuce, chicken, tomato, cucumber, and watercress, then serve.
