Mix the warm milk, yeast, and sugar and wait 8 minutes for it to foam.
Blend the flour, salt, and kulunce spice in a large bowl.
Add the yeasted milk, eggs, vegetable oil, and melted butter to the flour and knead into a soft dough.
Cover the dough and rest for 45 minutes, until lightly risen.
Tear off tangerine-sized pieces of dough and shape flat round buns.
Brush the tops with egg yolk, sprinkle with sesame seeds, and mark with a fork.
Bake the kulunce at 180°C for 24 minutes, until the tops and bottoms brown.
Rest on the tray for 10 minutes and serve with white cheese.
💡 Tip: If you do not have kulunce spice, mix mahlep, cinnamon, fennel, and a little nutmeg; adding cumin makes it taste more like a savory bun.
🍽️ Serving suggestion: Serve kulunce like a holiday breakfast with strong tea, white cheese, and optional grape molasses.
