Rinse the basmati rice and soak it in water for 30 minutes.
Slice the onions thinly and fry them in vegetable oil for 12 minutes, until golden.
Add the chicken, garlic ginger paste, yogurt, biryani spice, and half the salt to the onions.
Add the tomatoes, large potato pieces, and dried plums, then cook the sauce for 28 minutes until the chicken is tender.
Boil the rice with bay leaves and the remaining salt for 7 minutes until half cooked, then drain.
Layer the chicken sauce, rice, and fresh mint in the pot.
Steam the Sindhi biryani covered over low heat for 20 minutes.
Rest the pot for 8 minutes and serve without breaking the layers.
💡 Tip: Do not cut the potatoes too small; if they break down during the long steam, the biryani sauce turns cloudy and the rice grains stick together.
🍽️ Serving suggestion: Serve Sindhi biryani hot with optional cucumber raita and lemon onion salad.
