Chop the onion very finely, crush the garlic, and pick the cilantro leaves.
Heat the olive oil in a wide pan over medium heat and cook the onion for 5 minutes, until translucent. Add the garlic, aji amarillo paste, and cumin and fry for 1 more minute to open the sofrito.
Add the cooked rice and beans to the pan, season with salt and black pepper, and press firmly with a wooden spatula.
Spread the mixture into a crescent shape in the pan and cook over medium-high heat for 6 minutes, until the outside forms a crust.
Carefully turn with a large spatula and sear the other side for 4 more minutes.
Transfer to a plate, scatter fresh cilantro leaves on top, and serve with a fried egg or fried plantain if desired.
