Cut the boneless chicken thigh into large bite-size pieces.
Heat the sesame oil over medium in a wide pan and toast the ginger, garlic, and chili for 2 minutes.
Add the chicken and sauté 6 minutes until all sides take color.
Add the soy sauce, apple juice, and sugar.
Cook the chicken in the sauce with the lid ajar for 15 minutes.
Uncover and reduce 5 more minutes until the sauce is sticky and glossy.
Add the basil and stir 30 seconds until it wilts.
Serve right away with spring onion and rice.
