Wash the cilantro and parsley, then dry them in a salad spinner or with a clean towel.
Remove the stems from the green hot peppers and peel the garlic.
Put the cilantro, parsley, peppers, garlic, cumin, cardamom, lemon juice, and salt in a food processor.
Add the olive oil gradually and pulse into a coarse sauce.
Rest the zhug for 5 minutes and check the seasoning.
Serve the sauce in a small bowl.
