Cut the chicken into cubes; dice the onion, cut the peppers into 2 cm squares, cut the potatoes into 1.5 cm cubes, crush the garlic, and grate the tomatoes.
Heat the neutral oil in a wide pan over medium-high heat and sear the chicken on all sides for 6 minutes.
Add the onion and cook for 4 minutes until lightly golden, stir in the garlic for 30 seconds, then add the tomato paste and fry for 2 minutes.
Add the potatoes and peppers to the pan and toss for 5 minutes; add the salt, black pepper, red pepper flakes, and thyme.
Add the grated tomatoes, cover, and cook over low heat for 18 minutes until the potatoes are tender.
Divide onto serving plates, sprinkle generously with chopped parsley, and serve hot.
💡 Tip: Do not add any liquid before frying the tomato paste in oil for 2 minutes, otherwise it keeps a raw flavor. Add the potatoes with the onion and cut them thick enough so the outside does not fall apart as the inside cooks.
🍽️ Serving suggestion: Divide onto serving plates, scatter plenty of chopped parsley over the top, and serve with rice pilaf or bulgur pilaf.
