Cut the potatoes and cauliflower into equal-size pieces.
Fry the cumin in oil for 30 seconds until fragrant.
Add the ginger, turmeric, and cilantro and stir for 1 minute.
Add the potatoes and cook for 10 minutes with the lid slightly ajar.
Add the cauliflower and cook for 10 minutes until coated with the spices.
Close the lid and cook over low heat for 15 minutes, keeping the vegetables from falling apart.
Sprinkle with cilantro and serve hot with naan or pilaf.
💡 Tip: Resting for 3 minutes after taking it off the heat gives the aromatic components time to come together.
