Boil the ziti or penne in plenty of salted water for 2 minutes less than the package time, then drain.
Soften the chopped onion in olive oil for 6 minutes, add the garlic, and turn for 1 minute.
Add the tomato puree, salt, black pepper, and basil and simmer the sauce for 12 minutes.
Mix the pasta with two thirds of the sauce.
Layer pasta, ricotta or lor, mozzarella, and parmesan in a baking dish.
Spread the remaining sauce and cheese on top.
Bake the ziti at 195°C for 24 minutes, until bubbling and browned.
Rest the pasta for 6 minutes after it comes out of the oven, then slice.
💡 Tip: Boil the pasta 2 minutes less than the package time; it keeps absorbing sauce in the oven, so fully cooked pasta ends up too soft.
