Boil the sugar and water in a saucepan, add the lemon juice and cook for 5 minutes to make syrup.
Roast the flour in sunflower oil over low heat for 20 minutes, until it changes color.
Add the tahini and stir for 3 minutes, until the mixture is homogeneous.
Gradually add the hot syrup, stirring constantly until the halva comes together.
Press the halva into a parchment-lined dish.
Rest at room temperature for 20 minutes, then slice.
