Cut the chicken breasts into 4 pieces and flatten them lightly.
Mix the milk and lemon juice and rest the chicken in it for 30 minutes.
Prepare the flour, salt and black pepper in one bowl, the eggs in another and the panko in a third.
Coat the chicken in flour, egg and panko.
Heat the oil to 175°C and fry the chicken for 6 to 7 minutes.
Heat the hot sauce and butter for 2 minutes to make a glossy Buffalo sauce.
Mix the mayonnaise with finely shredded cabbage.
Coat the chicken with the sauce and serve in sesame buns with lettuce and cabbage slaw.
