Season the chicken pieces with salt and black pepper.
Heat the olive oil in a pot and brown the chicken on both sides for 8 minutes.
Chop the onion, garlic, red pepper and mushrooms.
In the same pot, saute the onion, pepper and mushrooms for 8 minutes.
Add the garlic, tomato puree, chicken stock and dried thyme.
Return the chicken to the sauce and cook covered for 35 minutes.
Sprinkle with parsley and serve hot.
