Finely grind the peanuts, grate the tomatoes, and chop the onions, garlic, and ginger.
Rub the chicken thigh pieces with half the salt and the black pepper.
Sear the chicken in the vegetable oil for 8 minutes, until it takes on color.
In the same pan, soften the onions, garlic, and ginger for 5 minutes.
Add the tomatoes, mushrooms, ground peanuts, and remaining salt, and cook for 8 minutes into a thick sauce.
Briefly soften the banana leaves over heat, then divide the chicken and sauce among the leaves and wrap into packets.
Steam the packets for 85 minutes, until the chicken separates easily from the bone.
Rest the packets for 5 minutes and open them carefully.
