Wash the simindirik, soak it in warm water for 10 minutes, then drain.
Finely chop the onion and soften it in butter for 6 minutes.
Add the kavurma meat and stir with the onion for 3 minutes.
Add the tomato paste, salt, and black pepper and fry for 2 minutes.
Add the water and simindirik to the pot and cook the soup for 22 minutes, until the wheat softens.
If the consistency thickens, loosen with 0.5 cup of hot water.
Serve hot with dried mint and lemon.
💡 Tip: Simindirik is very finely cracked wheat; if you use ashure wheat it will not cook in the same time, so do not confuse it with bulgur.
