Cut the chicken thigh fillets into bite-size pieces.
Coat the chicken with egg white, 1 tablespoon of soy sauce, and half of the cornstarch.
Mix the remaining soy sauce, rice vinegar, brown sugar, crushed garlic, ginger, dried hot peppers, and sesame oil for the sauce.
Coat the chicken pieces in the remaining cornstarch.
Heat the vegetable oil to 175°C and fry the chicken for 5 minutes, until crisp.
Boil the sauce in a wide pan for 3 minutes, until glossy.
Toss the fried chicken in the sauce for 1 minute to coat, then chop the scallions.
Serve General Tso chicken immediately with scallions.
💡 Tip: Do not leave the chicken sitting in the sauce; the crisp coating softens within minutes, so prepare the rice and serving plate first.
🍽️ Serving suggestion: Serve General Tso chicken hot with steamed rice, scallions, and boiled broccoli if desired.
