Puree the onion, tomatoes, ginger, and hot pepper.
Heat the vegetable oil in a pot and cook the puree for 6 minutes.
Add the peanut butter and vegetable stock and simmer for 18 minutes to thicken.
Bring half of the hot water to a boil in a separate pot.
Add the cassava flour gradually, stirring constantly with a wooden spoon.
Add the remaining hot water in a controlled stream and stir for 8 minutes to make a smooth dough.
Portion the konkonte with a wet bowl and serve with the peanut sauce.
💡 Tip: Do not dump the cassava flour into boiling water all at once, adding it gradually and stirring firmly prevents lumps.
