Cut the eggplants, peppers, tomatoes, and potatoes into large cubes.
Turn the onion and garlic in olive oil for 4 minutes.
Mix the vegetables, rice, salt, and black pepper in a baking dish.
Add the vegetable stock and cover the dish.
Bake at 190°C for 45 minutes.
Uncover and bake for 10 more minutes until the top is lightly browned.
Sprinkle with parsley and serve hot.
