Knead flour, water, 1 tablespoon of oil, and salt into a dough.
Rest the dough for 15 minutes so it does not crack while wrapping the potato filling.
Mash the 3 cooked potatoes and loosen them with the remaining olive oil.
Roll out the dough, spread on the poppy seed paste, and layer the potato over it.
Fold the dough, place it on the tray, and tuck the edges underneath.
Bake the bukme at 190°C for 25 minutes, until the top browns.
