Loosen the cornstarch with half of the water until smooth.
Put the coconut milk, remaining water, sugar, vanilla, and salt in a pot.
Heat over medium heat, then add the starch water when the sugar melts.
Stir constantly for 6 minutes, until it becomes a thick pudding.
Pour into a damp square dish and smooth the surface.
Cool for 20 minutes at room temperature, then chill for at least 2 hours.
Cut into squares and serve cold.
