Rinse the red lentils until the water runs clear.
Put the lentils, water, turmeric, and half of the salt in a pot.
Cook the lentils for 18 minutes, until soft and beginning to break down.
Finely chop the onion, tomatoes, garlic, and ginger.
Bloom the cumin seeds in the oil for 30 seconds, then cook the onion for 5 minutes.
Add the garlic, ginger, tomatoes, and red pepper flakes, then cook for 6 minutes into a sauce.
Stir the sauce into the lentils, boil together for 4 minutes, and serve with lemon juice.
