Dice the chicken small and slice the mushrooms.
Turn the garlic and ginger in oil for 1 minute.
Add the chicken and mushrooms, then cook for 8 minutes.
Add soy sauce and sesame oil, then thicken the filling for 3 minutes.
Divide the egg, chicken filling, and rice among bowls, then add chicken stock.
Steam the bowls for 35 minutes, invert onto plates, and serve with scallions.
