Mix the chicken with yogurt, garlic, ginger, garam masala, cumin, and half of the salt.
Knead a soft dough with the flour, remaining salt, 1 tablespoon of vegetable oil, and water, then rest for 15 minutes.
Cook the marinated chicken in a pan for 12 minutes, until its juices evaporate.
Divide the dough into 4 pieces, roll each into a thin paratha, and cook for 2 minutes per side in a pan.
Beat the eggs, pour one egg over each paratha, and return it to the pan until the egg sets.
Fill the parathas with chicken, thin onion, green chutney, and lime juice.
Roll the kati rolls tightly and serve hot.
💡 Tip: Set the egg on the paratha in a thin layer; a thick egg layer breaks the wrap and loosens the roll.
🍽️ Serving suggestion: Wrap the kati rolls in parchment and serve with lime wedges and extra chutney.
