Put the milk, cream, and salt in a wide-bottomed pot.
Keep the mixture over very low heat for 55 minutes, until a thick kaymak layer forms on the surface, without letting it boil over.
Remove the pot from the heat and let the skin settle at room temperature for 20 minutes.
Carefully transfer the kaymak layer to a tray with a spatula.
Place the tray in a 120°C oven for 10 minutes, until the surface dries slightly.
Cool the dried kaymak for 15 minutes, then cut it into small squares.
Add honey and walnut kernels for serving and present it without waiting.
💡 Tip: Keep the milk in a wide pan over very low heat; when the thin skin forms by itself, the dried kaymak lifts off more neatly.
