Mix the rice flour, tapioca starch, sugar, and salt.
Add the coconut milk and make a smooth pourable batter.
Divide the batter between two bowls, add pandan extract to one and red coloring to the other.
Set the oiled mold in the steamer and heat it for 3 minutes.
Pour a thin layer of the first colored batter and steam for 5 minutes until set.
Pour the colors in turn and cook 8 layers with the same method.
Steam the final layer for 10 minutes, then cool the dessert completely and slice it.
💡 Tip: Before adding each layer, the surface beneath it must be set; if you pour too early, the colors run into each other.
