Rinse the rice, soak it in warm water for 20 minutes, and drain.
Slice the eggplants, divide the cauliflower into small florets, and bake them with 2 spoonfuls of oil in a 200°C oven for 22 minutes.
Boil the chicken thighs with onion, half the salt, and 4 cups of water for 25 minutes.
Shred the chicken and measure its cooking water as chicken stock.
Layer the vegetables, chicken, and rice in the pot; add allspice, cinnamon, black pepper, remaining salt, and chicken stock.
Cook the makloubeh over low heat for 28 minutes, then rest for 10 minutes.
Toast the almonds in the remaining oil for 2 minutes.
Invert the pot onto a serving tray and serve with yogurt and almonds.
💡 Tip: Baking the eggplant with oil instead of frying is easier to control at home; excess oil will not collect at the bottom of the pot.
