Butterfly the carp and pat it dry with paper towels.
Mix the lemon juice, pomegranate molasses, olive oil, crushed garlic, cumin, salt, and black pepper.
Spread the marinade over the flesh side of the fish and rest for 15 minutes.
Thinly slice the tomatoes and onion, then place them on the fish.
Bake the fish at 220°C for 28 minutes.
Switch the oven to grill mode and brown the top of the fish for 5 minutes.
Rest the fish for 4 minutes and serve with lavash and lemon.
💡 Tip: When having the fish butterflied, do not cut the backbone fully apart; keeping it in one piece makes it easier to move on the baking tray.
