Wash the urad dal and soak for 6 hours.
Drain and grind with the water added gradually, until thick and smooth.
Mix in the ginger, finely chopped green pepper, cumin seeds, salt, and curry leaves.
Whip the batter by hand for 3 minutes to aerate it.
Wet your hand and shape the batter into rings.
Heat the oil to 175°C and fry the vadas for 5 minutes, until golden.
Drain and serve hot.
💡 Tip: Add the water spoon by spoon; too much water makes the batter loose and closes the ring shape.
