Cut the chicken breast into thin strips and marinate it with half the soy sauce and the cornstarch for 10 minutes.
Beat the eggs, cook them in a pan for 2 minutes as a chunky omelet, then set aside.
Thinly slice the cabbage, mushrooms, and scallions.
Cook the chicken in the vegetable oil over high heat for 5 minutes.
Add the mushrooms and cabbage and stir-fry for 4 minutes, keeping them slightly crisp.
Add the remaining soy sauce, hoisin sauce, and sesame oil, then return the egg to the pan.
Toss the mixture together for 1 minute and serve hot with lavash.
