Pat the whole chicken dry and make small holes in the breast and thigh meat.
Mix the strained yogurt, garlic paste, grated ginger, lemon juice, garam masala, turmeric, saffron, and salt.
Coat the chicken with the marinade and rest it in the refrigerator for 3 hours.
Place the boiled eggs and almonds inside the chicken cavity and tie the legs with kitchen twine.
Saute the finely chopped onions in butter for 10 minutes, until golden.
Add the tomato puree and cook for 8 minutes to make a thick sauce.
Set the chicken on the sauce and bake at 180°C for 70 minutes, until the internal temperature reaches 74°C.
Rest the chicken for 10 minutes, then slice and serve with its sauce.
💡 Tip: Pierce the meat in a few places without cutting through the skin; the marinade works inward and flavors the breast without burning the outside.
🍽️ Serving suggestion: Bring murgh musallam to the table with saffron rice, optional cucumber raita, and lemon wedges.
