Rinse the jasmine rice and glutinous rice, then soak them in plenty of water for 3 hours.
Slice the cucumbers and carrot thinly, mix them with the grape vinegar, sugar, and a little of the salt, and let them stand.
Drain the rice and steam it with the fenugreek seeds and half of the coconut milk for 20 minutes.
Remove the rice, mix it with the remaining coconut milk and salt, and steam for 15 more minutes.
For the curry, make a paste from the onions, garlic, and ginger, then fry it in the vegetable oil for 5 minutes.
Add the curry powder, turmeric, tamarind, and 1 cup of water, then boil the sauce for 8 minutes.
Place the tuna steaks in the sauce and cook over low heat for 12 minutes.
Serve nasi dagang with the fish curry, boiled eggs, and cucumber-carrot pickle.
💡 Tip: Use fenugreek seeds sparingly; even half a teaspoon gives the rice a clear aroma for Turkish palates.
🍽️ Serving suggestion: Serve nasi dagang on hot plates with fish curry, boiled eggs, and cucumber-carrot pickle.
