Boil the black-eyed peas until still firm but close to soft, then drain.
Soften the onion, garlic, ginger, and carrot in oil for 6 minutes.
Add the tomato paste and hot pepper and cook for 3 minutes.
Add the black-eyed peas and water, then cook over low heat until thickened.
Adjust the salt and mash some of the beans to bind the sauce.
Rest the ndambe for 5 minutes and serve hot.
