Place the flour in a wide pan and roast over low heat for 20 minutes, stirring until fragrant.
Melt the butter in a separate bowl.
Sift the roasted flour with the powdered sugar and vanilla.
Add the melted butter and knead until the mixture resembles wet sand.
Pour the mixture into a small tray and press it down firmly with the back of a spoon.
Sprinkle pistachios on top and cut into diamond shapes.
Chill the pressed mixture in the refrigerator for 2 hours, then slice.
